Cooking causes most restaurant fires, not wiring or heating
Between 2011 and 2013, fire departments in the United States responded to an estimated 5,600 restaurant fires a year, according to the U.S. Fire Administration's restaurant fire data. Those fires caused fewer than five deaths and about 100 injuries annually. They still cost $116 million a year in property damage, an average of $22,540 per fire. Cooking equipment caused 64% of restaurant fires. Heating equipment and electrical malfunctions each caused another 7%. For a restaurant owner, the cooking line is the highest-value fire-prevention target in the building — not the wiring, not the HVAC unit. Grease in the exhaust path is what a kitchen fire feeds on
OSHA's fire-safety guidance for commercial food-service kitchens names two specific risks inspectors look for: dirty ducts, flagged as a possible flue-fire risk, and grease traps that haven't been emptied, flagged as a possible grease-fire risk. The same guidance instructs kitchens to keep grill and duct work free of flammable residue and to empty grease traps on a routine schedule. None of that is about appearance. A hood can look clean at eye level while the duct run behind it and the fan housing on the roof — both out of daily view — still carry the grease a fire needs. That gap is the difference between wiping down a hood and a kitchen exhaust cleaning that reaches the full system.
Florida requires ventilation over every cook line
Florida's food-hygiene rule is specific here. Every food service establishment must have "approved local exhaust ventilation installed at or over all cooking units such as ranges, griddles, deep-fat frying units and other units of equipment which release appreciable quantities of steam, odors, grease or smoke," under Florida Administrative Code 64E-11. The same rule requires hoods to be designed so grease and condensation don't collect on walls and ceilings or drip into food, and it requires grease-extracting filters to be removable for cleaning unless they're designed to be cleaned in place. It also requires the food-contact surfaces of cooking equipment to stay free of encrusted grease deposits. Those are sanitation requirements, checked at routine health inspections — separate from the fire-code obligations below. The state's fire code points to NFPA 96
Sanitation code is one layer; fire code is another, with separate enforcement. Florida's State Fire Marshal adopts national fire standards into the Florida Fire Prevention Code by rule, and NFPA 96 — the standard for ventilation control and fire protection of commercial cooking operations — is one of them. That standard governs how a commercial kitchen exhaust system has to be built, inspected, and maintained to satisfy a fire marshal. We read Florida's rule text confirming that adoption. Florida isn't unique in adopting it, either — Maine's Office of State Fire Marshal lists NFPA 96, 2021 edition, among the standards it has adopted, so this is a state-by-state fire-code requirement, not a Florida-only one, even though the citation above is Florida's specific rule.

The same guidance calls for keeping grill and duct work free of flammable residue as an ongoing practice, not a once-a-quarter event. In practice, that means someone on your line checking grease traps every shift and flagging visible buildup around the hood filters between our visits. Grease buildup doesn't only raise fire risk. It also makes an exhaust system work harder and cost more to run. ENERGY STAR's guidance for restaurant operators notes that adding side panels to a hood cuts heat and smoke spillage, and that turning off the exhaust hood when equipment isn't running reduces wasted airflow.
